Glad you asked. We’re in the region of Paraje Altamira within the famous La Consulta District of the Uco Valley. Paraje Altamira is unique due to its concentration of stony soils with layers of calcium carbonate, its sky-high altitude (1,100m!), and its great shift in temperature from day to night.
Fermentation in concrete eggs followed by aging in steel tanks. No fining, nor filtration. Estate bottled, ya!
Don’t be afraid of dark rosé! Dark rosé wines are like super light red wines. A deceiving bright ruby hue morphs into raspberry, cranberry, and a hint of plum skin on the palate. Then, underneath the juicy fruit, savory perks of roasted pepper and sweet stone add their complexity and intrigue. So, forget those watery, pale pink styles and try something new!
Cabernet Franc contains an organic compound called pyrazine which is also prevalent in Cabernet Sauvignon, Malbec, Merlot and Carménère. In Cabernet Franc, pyrazine is responsible for aromas of aloe vera, violets, and sweet green peppers.
