Aging: Prolonged maceration at a low temperature, aged in concrete walls for 3 months.
Old growth vines: 30 year old.
Serving temperature: 61-64 oF.
Fermentation: With indigenous yeasts in open concrete pools and Estate bottled.
Alcohol: 13,7%.
